I never knew that Gobi Parathas existed till a friends mom made them and fed us. I must say, Gobi has never tasted better. These parathas are a meal by themselves and dont really need any condiments.
Ingredients
For the stuffing

<p><strong>Ingredients</strong></p>
<p><strong>For the stuffing</strong></p>
<p>1 small cauliflower finely chopped or grated<br />salt to taste<br />2 green chillies finely chopped<br />pinch of garam masala<br />pinch of turmeric</p>
<p><strong>For the dough</strong></p>
<p>2 cups wheat flour<br />salt to taste<br />pinch of turmeric<br />water to knead<br />1 tbsp oil</p>

<li>Mix all the stuffing ingredients, you can be creative with the spices and add any spice of your choice.</li>
<li>Knead the dough making sure its not too soft.</li>
<li>Now take a small ball of the dough and roll to a small sized roti, stuff it with the gobi mixture, seal completely,&nbsp; cover it with dry wheat flour and roll gently.
<li>Shallow fry with a atleast a teaspoon of oil for each paratha.</li>

<li>Let the bhindi mixture cool for 5-7 minutes.
<li>Now take a small ball of the dough and roll to a small sized roti, stuff it with the bhindi mixture, seal completely,&nbsp; cover it with dry wheat flour and roll gently.
<li>Shallow fry with a atleast a teaspoon of oil for each paratha.
<li>Serve piping hot with ketchup, pappad or pickles.</li>
